Baked Salmon

Well, here it is!  I must say, this is one of my favs.  I LOVE salmon.

Ingredients:

1 salmon fillet or loaf (this is a loaf but I normally use a fillet)

1 cup chopped tri colored peppers

1/4 cup coconut oil (I’ve used mayonnaise before but the coconut oil is healthier)

chopped parsley (optional)

sea salt and cracked black pepper to taste

Preheat the oven to 350.  Place fillet on a cookie sheet.  Coat the salmon with the oil (you can melt it slightly or just rub it on as a solid).  Spread the chopped peppers over the fillet.  Sprinkle salt and pepper over it and top with parsley.  Bake for 20-25 minutes until the salmon is flaky.  Serve immediately!

And the sides were sauteed brussel sprouts and quinoa.

MMMMM ALASKAN SALMON!

What’s for dinner tonight?  Just as the title says…Alaskan salmon.  I’ll post the fun recipe that I have been using for a little while that my daughter actually likes and hopefully you will all enjoy it. 

I’m so grateful to have been able to leave Alaska with a cooler packed full of meat.  Salmon, halibut (which is now gone *sad face*), dear and my favorite….MOOSE!  YUMMY!!!

Now that I’m blogging again, as I cook each of these sweet meats, I will share the experience with you and hopefully you can take something from it as an idea for one of your own dishes. 

Maybe my culinary future is to cook in my home and share it with you all.  But I’ll tell you a secret…SHHHH…YOU MUST TELL NO ONE….

my dream….is to be a pastry chef with a coffee shop of my very own. 

So…once I’m settled in California…I will begin making fun new creations for that goal.

Uh oh!  Here goes that giddy feeling again!  I LOVE MY LIFE!

Being a Foodie

I love to cook!  For years, I wanted to go to culinary school.  I began a career and had a small child and so that never happened.  HOWEVER, I’ve had some wonderful cooking influences in my life and taught myself a lot.  It’s so fun learning new things and finding great recipes to try and tweak.  I was a freelance writer in Anchorage for examiner.com and reviewed coffeeshops and restaurants for the state of Alaska.  What a great opportunity to get amazing food (most of the time) and share the experience with others.  That’s how I became a real foodie.  Since then, food has become so fun and interesting to me.

On another note, becoming a foodie also was a direct result of wanting to live a healthier life and learn how to eat whole foods and make them YUMMY!!!  So, as time goes on, I will share some amazing recipes with you and hope that you enjoy them.  And if you have any recipes YOU would like to share, PLEASE DO!!!  I welcome healthy fun foods to try, ALWAYS!
