Baked Salmon

Well, here it is!  I must say, this is one of my favs.  I LOVE salmon.



1 salmon fillet or loaf (this is a loaf but I normally use a fillet)

1 cup chopped tri colored peppers

1/4 cup coconut oil (I’ve used mayonnaise before but the coconut oil is healthier)

chopped parsley (optional)

sea salt and cracked black pepper to taste

Preheat the oven to 350.  Place fillet on a cookie sheet.  Coat the salmon with the oil (you can melt it slightly or just rub it on as a solid).  Spread the chopped peppers over the fillet.  Sprinkle salt and pepper over it and top with parsley.  Bake for 20-25 minutes until the salmon is flaky.  Serve immediately!



And the sides were sauteed brussel sprouts and quinoa.
